Your mention of a "gantry" makes me think you are looking at a CMM. Typically the plate used on CMM are not lapped flat to the same specifications used on surface plates. It's a different application. I'd look for the rest of it if it were me.
Now with that said, the granite involved will be as stable as any surface plate and most certainly could be used as such if you wanted to have it lapped. It's going to be pretty flat, perhaps flat enough for casual use as a surface plate, just no promises. That sounds like a "goodie-to-grab" in any case if the price is right.
