My Grandfather was a wheelright and cabinet maker.
His most scathing comment regarding someones work was
"He couldnt make a rabbit hutch with leather hinges"

Here's one saying that my Dad still uses whenever me or my brothers use any of his tools, from a pocket knife to a chain saw:

Don't get any blood on it!

I enjoy it for it's subtlety; it's phrased like concern for his equipment, but is really a non-naggin way to say "don't hurt yourself".
I found myself saying it two weeks ago when I handed my pocket knife to our co-op student at work.

For any activity there are four levels of competence:

Unconscious incompetence - You don't know what you don't know.
Concious incompetence - You have discovered what you don't know.
Conscious competence - You are able if you think about it.
Unconscious competence - You complete the activity without even thinking about it.
