I have a new 4" x 80 tooth saw that has a 1" mounting hole; in my mystery stock I have 1.625" and 2.025 stock. I would like to be able to cut 1.00" material and thinking the 1.625" holding clamps will work but would appreciate some advice.

1.625 is more than sufficient your not spinning that saw very fast. 80-120 RPM should good enough.
 
My biggest slitting saw arbor is 16 mm (20/32") and the locking nut/washer is 20 mm (25/32"). That holds a 80 mm (3") slitting saw perfectly even at 300 RPM.
 
A 4" 80 tooth saw sounds more like a screw slotting saw than a slitting saw, it would likely choke on chips and break.
 
My commercially made arbor for 1" hole is 1.500" dia. 4" saws are the biggest I use with it. Well I do have some 6" & 8" slitting saws but I'm too scared & not stupid enough to use em, don't have a need for them anyway. I just threw a low bid on them & happened to win.

I agree, 4" 80 tooth sounds like a slotting saw. My B&S 4" slitting saws are 36 tooth.
