If I sandwich some brass shim between two pieces of steel with a thin smear of flux between them and bind them with iron wire and place in my furnace till red will they braze together well?
You will need to get them pretty hot for the brass to flow. If you were using a brazing alloy with silver in it the melting point will be much lower. Make sure that the flux you are using is a high temperature brazing flux. The lower temperature soldering fluxes will burn out before the material is ready to braze.
Furnace brazing is a widely-used technique. Might be worth checking out a library book in order to make the right material choice and time/temp parameters, but you've got the right idea.
One way to know would be to apply some brass to each surface so you can see that they are well coated. Then
sandwich the pieces together with some flux and give it the heat. I have done that with success and it works with silver solder as well as brass.
