There was 3 of these in a bucket of parts that came with an old Hendey lathe that I bought... they look like they may clamp to a dovetail, maybe? Any ideas?

Appears to be features looking through those bores...can you provide pics of the back of the parts?

The back looks like the front... there is a lever of some sort inside and something that looks like a wire hook, or maybe the end of a spring...

I'm guessing it is used to clamp something to a dovetail, like maybe an indicator holder or a coolant nozzle?

I'll see if I can get one apart... they all seem to be frozen. Maybe that will shed some light on it...

I agree with your best guess, some sort of clamp/tool holder - or at least that is how I could see it being used. However, it seems a little complicated with the internal slot, etc. for such a simple purpose. I'm sure one of the members will recognize it for a more precise identification...

Ok, I got one apart... this is the internals, laid out in their positions on top of the block...

The screw on the left would push against the arm, moving it across the upper hole, thereby clamping a rod in the hole...

Interesting! Whatever it is, I hope somebody recognizes it and can give it a name.
