I ended up shimming the new gib with epoxy instead of solder. I put a layer of packing tape on my surface plate and put both gibs on it, then ran a dti across both until I shimmed the new one exactly the same. Ended up being a 0.020 shim.
With the shim figured out I slathered on some JB Weld on the back of the new gib and set it down on the tape. A flat bar and some weights on top of the gib pressed out the excess epoxy while it cured. It came off the tape easy and made a surprisingly perfect shim. I only had to do some minor scraping on each end of the gib to get good contact the full length.
