I dont understand why you would sterilize sauerkraut doesnt this kill all the beneficial bacteria, unless you are only doing the jars.
I ferment mine then bottle and keep in the fridge.
It doesnt last long enough to go "off"
We also do Kimchi the same way.
 
I just started canning it Savarin, this is the second batch. I make about 5 gallons at a time, before would freeze it, till needed, but was always froze when I needed it. I've been filling the jars with 1 part vinegar and 4 parts water. Takes the salty taste away. Like eating candy now.

Yum... I haven’t made any for a few years now but have been thinking I should start again. I still have the wooden “kraut hobel” from my grandparents farm to do the shredding, it’s going on 80-years old by now. Always scared I’m going to take my fingers off before I’m done though!

It took a few days but i managed to clean up the garage to where it was before only thing left of the parts car is the engine and box, they were too heavy for me to lift and carry them by myself.

Good job GoceKU How many blades did it take to cut it up. I guess using a torch the gas would have been too expensive.

I didn't use saw, i used an angle grinder at the end i counted 16 small 4" stones and 2 big 9"stones. The Junk man arrived within minutes after i finish so i did not take a picture with it in pieces.
 
I’ve been doing a lot of close work recently and not in the best light, so I dug out my headband light-thingy to see if it would help.

Yes it does, works great as a matter of fact, but I find the elastic harness arrangement and heavy lamp right on my forehead uncomfortable. Sooo...

I had an el-cheapo welding helmet kicking around that had a half-decent harness that I could scavenge...

I was going to keep the pivot nuts on the side pieces until I realized they were redundant without the face shield, so I got rid of those too...

The elastic bits unclipped from the lamp no sweat, and then I was faced with the tricky reality of how best to over-engineer a method of holding the lamp to the welding harness. After some careful consideration I went for the bag of cable ties.....

The finishing touches for some padding was easy enough with a roll of canopy tape I had in the cupboard (y’all got some of that too, eh?). Cuts great if you stick it to some wax paper first. And ta-dah, the finished effort after all of ten minutes!

Poor PM30MV one year later. Folks at PM know we ask a lot of our mill. She keeps on chugging. Here's a plate clamp in the making for a project coming up. 3/4" AlTiN coated carbide mill hogging a 1.1"w x 1.0"d in slot in a block of 1018. Making a lot of chips, but it didn't take long.

The loose belts on my quickly repaired, and put into service Quincy compressor was getting on my nerves. So I made up a tension adjuster for the motor, and added some temporary rubber cushions. Much quieter now. Mike
